These Grilled Pineapple & Shrimp Skewers are quick to prep, super flavorful, and easy to batch for a crowd. Serve them on their own or over coconut rice for a light, tropical meal.


🍤 Grilled Pineapple & Shrimp Skewers Recipe

Ingredients:

  • 1 lb large shrimp, peeled and deveined

  • 2 cups fresh pineapple, cut into chunks

  • 2 Tbsp olive oil

  • 2 Tbsp honey or maple syrup

  • 2 Tbsp soy sauce or coconut aminos

  • 2 cloves garlic, minced

  • Juice of 1 lime

  • 1/2 tsp smoked paprika

  • Salt & pepper, to taste

  • Optional: red chili flakes for heat

  • Skewers (metal or soaked wooden)


Instructions:

  1. Make the marinade: In a bowl, whisk together olive oil, honey, soy sauce, garlic, lime juice, paprika, and a pinch of chili flakes if desired.

  2. Marinate: Add shrimp to the marinade and toss to coat. Let sit in the fridge for at least 15–30 minutes.

  3. Assemble skewers: Thread shrimp and pineapple alternately onto skewers.

  4. Grill: Preheat grill (or grill pan) to medium-high heat. Grill skewers 2–3 minutes per side, until shrimp are pink and slightly charred and pineapple is caramelized.

  5. Serve: Sprinkle with fresh herbs (like cilantro or parsley) and serve warm. These are delicious on their own or over rice!
